Exploring the Art and Science of Gelato at SHTM

Students from the Artisanal Patisserie Career Pathway at the School of Hospitality and Tourism Management recently participated in a hands-on gelato workshop conducted by Chef Gigi Teoh, founder and chef at Idolci Gelato.

The session introduced students to the fundamentals of gelato production, covering topics such as temperature control, ingredients and composition, production processes, and specialised equipment including pasteurisation systems and blast freezers.

Students also observed live demonstrations by Chef Gigi and her team, who prepared a variety of gelato flavours including matcha, butter, and chocolate — followed by a tasting session where students sampled the freshly made gelato.
